Carlo started cooking at a young age next to his grandmother, entering his first professional kitchen at the tender age of 13, when he took a job as a chef apprentice at the Michelin-starred restaurant Don Salvatore.
With time spent in some of the world’s renowned kitchens, travelling became an integral element in the development of his craft with Carlo making Japan, France and Sweden, among other countries, his home. His passion and determination to become a leading chef grew into an obsession, and his path took him to some of London’s top kitchens to hone his skills; including those of Gordon Ramsay Holdings, Angela Hartnett at Murano and Galvin at La Chapelle to name a few.
Amethyst’s 12-course tasting menu takes diners on a gastronomic journey of meticulously prepared plates featuring clever and creative flavour combinations, influenced by the simplicity and elegance of Nordic and Japanese cuisine, with French and Arabic influences.
Whilst the menu will change regularly based on the availability of the best seasonal British produce, diners can expect the likes of Burned Hay Croquette; Scallops & Wasabi Caviar Tartelette; Salmon & Foie Gras; Caramel Miso Black Cod & Naganegi Dashi; and Ras El Hanout Beef, Apple & Date.
